Harvested in Sicily at springtime, citrus honey is sweet, fruity and has a pleasant acidic bouquet. It crystallizes quite rapidly, giving origin to a relatively smooth, in-mouth pleasant texture. Perfect for teas and infusions, it is widely used in pastry-making.
Harvested in Sicily in two different periods (mid-summer and end of summer), eucalyptus honey has a dry-mushroom, licorice aroma, and a tinge of smokiness; in-mouth taste is mildly sweet with a strong personality.
During the month of June we take our bees “on holiday” to forage on the Alps in Piedmont and Aosta Valley, above 1500 meters of altitude in pristine spots, such as the grazing mountain lands. The multitude of flowerings gives origin to an unforgettable honey.
A spontaneous assembly of several flowerings, our multi-flower honey is harvested on Emilia Romagna and Calabria. It has an average sweetness and a good aromaticity. It is the most suitable as table-top honey, both as a sweetener and combined with varied maturation cheese.
